Brawn: Intelligent Cuisine

Brawn is a wine-focussed restaurant in London. The wine list is loaded with an interesting selection of natural wines including some smaller producers that have not received much exposure. We also very much enjoyed the food here on our recent visit.

It is owned by Ed Wilson, a chef whose work we have admired for some time. He cooks French-influenced food with a light touch.

The wine list is loaded with good, natural choices such as the Moussamoussettes from Rene and Agnes Mosse and Piege a Filles from Les Capriades which are both delicious pet nats, the Selves which is a Chenin Blanc from the remote Aveyron region created by Nicolas Carmarans, the powerful and elegant Leon Barral white from the Languedoc and the lovely Paski from Italian producers Cantina Giardino.

We returned here in 2024 and had another exciting meal that included some very interesting dishes.

It was good to peruse the bottle display on the wall (see below) and to meet up with some of the long-term staff members who had served us before.

We settled in with a de Moor Chablis which we knew would match some of the dishes we had just ordered.

We started with a dish that we have always treasured, namely the panisse from around Nice which is made from a batter of chickpea flour and water. The ones we were served were crunchy and quite delicious. They were served with squacquerone which is a cow’s milk cheese from Romagna in Italy. It almost has the consistency of a dip due to the high water content. They were stunning together.

Next came a salad of peaches and greens which looked beautiful and tasted delicious.
