Path – Interesting pastries
Path is a small, yet inviting, restaurant in the Shibuya district of Tokyo that serves the most amazing pastries and coffee in the mornings along with more substantial fare so that you can have a satisfying breakfast, lunch or dinner here.
The croissants and pain au chocolat are next level and are constantly being cooked during the morning in the oven so you might have to wait a few minutes but then the pastries are served directly from the oven to your plate. Extraordinary!

We had two pastries (a croissant and a pain au chocolat) direct from the oven while we were waiting for the more substantial breakfast dish of Dutch pancake. The croissant was pure perfection. The butteriness of this croissant, without sacrificing any of its structure and crunch, is next level.
The Dutch pancake arrived around the advertised 30 minutes waiting time and saw a beautifully presented pancake with a dough that almost had the consistency of a choux pastry puffed on the edges to create a container for some excellent prosciutto and burrata. This was a very satisfying dish.

We should add here that we have been obsessed with choux pastries for decades with a desire to make what the French call gougeres – which is a savoury pastry that are made in Burgundy to accompany wine. We have been trying hard over the years to creating a recipe that replicates the essence of the gougere from France while using as little flour as possible so that they come out of the oven as light as air!
When we returned from Japan we tried out our gougere recipe for making the Dutch pancakes that we had tried at Path and they came out perfectly.
