Marcella Hazan – Introduction

Marcella Hazan is a feisty character who is highly opinionated in a very nice way. She ‘believes’ in Italian food and she knows how to cook it therefore she expresses her opinions about how it should be done forcefully and with a great deal of clarity.

She moved to Florida in the United States after her retirement but was born and raised in the Emilia-Romagna region of northern Italy – the region that surrounds Bologna, one of Italy’s great food cities.

The Classic Italian Cookbook – The Book

Marcella Hazan has been a prolific author of cookbooks, however we are always drawn back to the publication that really brought her to the attention of the international community namely her Classic Italian Cookbook which was first published in the United States in 1973.

She went on to publish More Classic Italian Cooking in 1978. These two volumes have subsequently been joined together and published as Essentials of Classic Italian Cooking, in 1992.

We well remember attending cooking schools presented by Marcella in Melbourne in the 1980s and thoroughly enjoying her demanding requirements of her students. She definitely wanted everyone in her classes to master the intricacies of Italian cooking. Her books range widely and every recipe is one to be taken seriously.

This book is very highly recommended and deserves a place in the Foodtourist Top Fifty Cookbooks.
