Poly – Introduction

Poly is an exciting spin-off from one of our all-time favourite restaurants, Ester. Situated on the edge of the Sydney suburb of Surry Hills, this casual bar is a perfect place to drop in for a drink, a snack or a series of snacks that can be put together to provide a satisfying meal.

The food is smart and sharp with bold flavours and eye-catching presentation. The wine list is broad and generous with leading Australian producers such as Momento Mori, Commune of Buttons, Manon and Si Vintners or overseas stars such as Strohmeier, Didier Grappe, Cantina Giardino and Les Terres Promises among many others.


Dishes we have enjoyed include a stunning skewer of octopus with potato puree, a “cigar” of potato, a prawn dish with salted egg yolk sauce, a honey bug with shellfish aioli, the ricotta gnudi with stinging nettle and the already iconic “Queen of Puddings”.
